Chia pudding

*1/4 cu chia seeds

*2 tablespoons of cinnamon

* one can of coconut milk

* 1/4 teaspoon of vanilla

* Stir all together and refrigerate for about 6 hours

* Serve with berries and nuts!

Recipe for sweet potato breakfast casserole!

 

* 3 small sweet potatoes, peeled and grated

* 3 tablespoons of coconut oil

 

* 1 1/2  pounds of ground pork or turkey

* 1/4 tsp each of Sage, thyme, rosemary and red pepper flakes

 

* Half yellow onion, diced

* 5 eggs

 

* can of coconut milk

* Salt and pepper, to taste

 

Instructions

 

*Preheat oven 350 cook uncovered for 45 minutes *Place the grated sweet potatoes on the bottom of a greased dish.

* Sauté ground meat, onions and herbs

*Layer meat mixture on top of sweet potatoes .

*Beat eggs, Coconut milk together.

* Pour  egg mixture on top of meat

*Pop it in the oven!!!
